It\u2019s the traditional meal that everyone in the country knows and loves. It comes in many forms and flavours and you can see different variations in other Balkan countries.\u00a0<\/span><\/p>\n<p><span style=\"font-size: 12pt;\">Banitsa is made with homemade or commercially made pastry sheets that are prepared from a baker\u2019s hard dough including flour, eggs, and water. You can find pastry sheets in every Bulgarian shop, just ask for \u201ckori za Banitsa\u201d. The filling is made of white cheese (Bulgarian \u201csirene\u201d), yogurt and eggs. And, generally, that\u2019s it!<\/span><\/p>\n<p><span style=\"font-size: 12pt;\">There are several varieties which include <strong>banitsa with spinach or with pumpkin<\/strong> (tikvenik), etc. But you have to know that the traditional banitsa is made with Bulgarian white cheese.<\/span><\/p>\n<p><span style=\"font-size: 12pt;\">Banitsa also has a breakfast form \u2013 <strong>banichka<\/strong>. It is best served with boza or ayran. You can read more about typical Bulgarian breakfasts in\u00a0<a href=\"https:\/\/travellingbuzz.com\/5-typical-bulgarian-breakfasts-try\/\" target=\"_blank\" rel=\"noopener\">my other post<\/a>.<\/span><\/p>\n<p><span style=\"font-size: 12pt;\">In a\u00a0<strong>New Year\u2019s Eve<\/strong> dinner Banitsa<strong class=\"markup--strong markup--p-strong\">\u00a0<\/strong>is a must on the festive table. On that day we make it with some\u00a0<em class=\"markup--em markup--p-em\">lucky charms or fortunes<\/em> (small sheets of paper with written wishes). We put <em class=\"markup--em markup--p-em\">coins<\/em> and sometimes a piece of <em class=\"markup--em markup--p-em\">dogwood branch<\/em> with a bud which symbolize wealth. <\/span><\/p>\n<p><span style=\"font-size: 12pt;\">We put the fortunes in the pastry and then everyone in the house take a piece of the Banitsa and the lucky charm in it determines the upcoming year.\u00a0 Part of the tradition is putting the dogwood pieces from the Banitsa in the burning fire. If they pop this means health and wealth.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><strong>Ingredients<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-size: 12pt;\"><strong>1<\/strong> pack of filo dough<\/span><\/li>\n<li><span style=\"font-size: 12pt;\"><strong>250<\/strong> g Bulgarian cheese (or feta cheese)<\/span><\/li>\n<li><span style=\"font-size: 12pt;\"><strong>4<\/strong> eggs<\/span><\/li>\n<li><span style=\"font-size: 12pt;\"><strong>1<\/strong> cup of Bulgarian yoghurt<\/span><\/li>\n<li><span style=\"font-size: 12pt;\"><strong>3<\/strong> tablespoons butter<\/span><\/li>\n<\/ul>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-8541\" src=\"https:\/\/i0.wp.com\/travellingbuzz.com\/wp-content\/uploads\/2015\/01\/banitsa-3-e1592410235775.jpg?resize=1060%2C580&#038;ssl=1\" alt=\"\" width=\"1060\" height=\"580\" srcset=\"https:\/\/i0.wp.com\/travellingbuzz.com\/wp-content\/uploads\/2015\/01\/banitsa-3-e1592410235775.jpg?w=1280&amp;ssl=1 1280w, https:\/\/i0.wp.com\/travellingbuzz.com\/wp-content\/uploads\/2015\/01\/banitsa-3-e1592410235775.jpg?resize=300%2C164&amp;ssl=1 300w, https:\/\/i0.wp.com\/travellingbuzz.com\/wp-content\/uploads\/2015\/01\/banitsa-3-e1592410235775.jpg?resize=768%2C420&amp;ssl=1 768w, https:\/\/i0.wp.com\/travellingbuzz.com\/wp-content\/uploads\/2015\/01\/banitsa-3-e1592410235775.jpg?resize=1024%2C560&amp;ssl=1 1024w, https:\/\/i0.wp.com\/travellingbuzz.com\/wp-content\/uploads\/2015\/01\/banitsa-3-e1592410235775.jpg?resize=1200%2C656&amp;ssl=1 1200w\" sizes=\"(max-width: 1060px) 100vw, 1060px\" data-recalc-dims=\"1\" \/><\/p>\n<p><span style=\"font-size: 14pt;\"><strong>Preparation<\/strong><\/span><\/p>\n<p><span style=\"font-size: 12pt;\">Mix the products for the filling in separate bowl\u200a\u2014\u200aeggs, white cheese and yogurt. Add some butter and mix well. <\/span><\/p>\n<p><span style=\"font-size: 12pt;\">Then take a large baking pan and put some oil on the bottom. Layer the pastry sheets individually one by one with small amounts of the filling between them. Roll each sheet and arrange the finished rolls in the baking pan so that they form a spiral. <\/span><\/p>\n<p><span style=\"font-size: 12pt;\">Grease the pastry with egg yolk and bake in oven at <strong>200\u200a\u2014\u200a250 \u00b0C<\/strong> until golden.
